SUGAR COOKIE BARS WITH CINNAMON FROSTING


I have always loved sugar cookies, and after several years of making them, I finally have a recipe that I absolutely love. And an added bonus... I made them into bars. It eliminates a mess & frees up some time. Who doesn't like a cookie bar?


And I have a funny story for you... you will learn that I won't hide my mistakes. Instead, I laugh about them. I may sound like a complete hot mess but hopefully, you all can relate and will get a good laugh out of this.


I have made these cookie bars so many times but the one and only time that I make them for this blog post, so I can take pics, I mess them up! It all started because I was trying to majorly multi-task. I had two of my children and my hubby that was headed to baseball tryouts, and I had a few hours before I was going to a church activity with my daughter. So, I started cooking dinner a few hours early, I had kids just getting home from school, and I was trying to make these cookie bars. Let's just say everything turned out fabulously, all but the sugar cookie bars. I made the dough, placed it in the cute red baking dish that I had explicitly pulled out just so I could take pictures. I popped it in the oven, set the timer for 20 minutes (like I would typically do). In the meantime, my kids won't eat the dinner I made & my hubby won't eat leftovers, so what do you do with a giant pot of soup? You message your sister and ask her if she wants dinner. I then grabbed a bowl, put some soup in it and hurried and delivered it to her house... good thing she only lives less than a mile away from me. I made it back right as the 20-minute timer went off. I hurried and pulled them out of the oven, checked to see if they were done and noticed they were extra fluffy. Well, why would they be fluffy???? Hello! Because I totally forgot that I needed to only put 1/2 the cookie dough in my cute red pan. I usually put this recipe in a cookie sheet, and they turn out amazing. Well, I continued to bake them for a little bit longer and pulled them out when I thought they were done. I left them on the counter to cool while I ran to the activity with my daughter. When I got home, I whipped up a batch of my fantastic cinnamon frosting, that did turn out by the way. I then hurried and put the frosting on the sugar cookie bars, put the sprinkles on them & took a photo of them in the pan. I then sliced into them so I could put them on a cute plate & take another picture. Let's just say as I was slicing into them, I could tell something was wrong, it didn't feel right. I put one on the plate, and it was completely raw. My hubby was kind enough to take a bite, complimented me on the frosting and then threw it away. LOL!!!! Who doesn't love cookie dough, right!?!? Well, if you can learn anything from my crazy story... if you are going to put the dough in a 9x13 pan instead of a cookie sheet, make sure that you only put 1/2 the cookie dough in the pan.


So lets get to these cookie bars...the reason I love these is because they are moist & delicious. And should I mention that the cinnamon frosting on top makes them even extra delicious.


Sugar Cookie Bars:

1 Cup - Sour Cream

1 Cup - Butter Softened

2 Cups - Sugar

2 Eggs

5 1/2 Cups - Flour

3 tsp. - Baking Powder (2 tsp. reserved for sour cream)

1 tsp. - Vanilla

1 tsp. - Salt



Cinnamon Frosting:

5 Cups - Powder Sugar

1 Cup - Softened Butter

1/4 Cup - Milk

1/4 - 1/2 tsp. - Cinnamon Oil or Extract (add more according to your liking).


Step 1: Place Powder Sugar & Softened Butter in a mixing bowl and slowly mix together until thoroughly combined.


Step 2: Continue mixing and slowly add the Milk to the mixture. Allow to mix until the frosting has become slightly fluffy.


Step 3: Add Cinnamon Oil or Extract a small amount at a time. You don't want to add to much and have it be too hot. Been there and done that.


Step4: Frost your cookie bars and enjoy!


If you have some frosting leftover you can store it in a container in the fridge and use on another treat.
